Our guests particularly liked this soup as it is something out of the ordinary.

Zutaten für 10 Personen:
(Ingredients, serves 10):
1 kg frische Maronen (fresh chestnuts)
200g Zwiebeln (onions)
300 g Schinkenspeck (bacon)
200 g Knollensellerie (celeriac)
2 l Gemüsebrühe (vegetable stock)
400 ml Sahne (cream)
1 Zimtstange (cinnamon stick)
1 Lorbeerblatt (bay leaf)

Zubereitung:

Preparation:
1. Cook the chestnuts for about 10 minutes. Then take them out one after the other with a strainer and peel them (both the shell and skin). This is a rather unpleasant work, but if you peel them while they're still warm/hot it works out okay. After peeling them I cut the chestnut in half so that they will cook more quickly later.
2. Cut onions and bacon and roast in butter. Add the chestnuts and the diced celeriac and quench with the vegetabele stock. Add the cinnamon stick and bay leaf and cook for about 30 minutes.
3. Take out cinnamon stick and bay leaf. Puree the chestnuts. Pour in the cream and season to taste.
